  • Overview

    Southern cuisine is the most varied of the three. Rich in vegetables, rice and seafood, it has incorporated French, Cambodian and Thai influences into a style that is distinctively its own. It is generally more heavily seasoned, tropical and spicier yet sweeter than northern food.

    Itinerary

    Hands-on cooking class

    You will use Vietnamese kitchenware to realize and enjoy a tasty 3 courses Vietnamese meal.

    To end on a sweet touch, we will take care to complete this meal with a delicious seasonal dessert.

    During the class you just concentrate on the pleasure of discovering and cooking,

    we'll give you all the detailed recipes at the end.

    The cuisine of the south uses many herbs and spices and has been influenced by Cambodia, Thailand

    and India, among others. Curries using coconut milk are an example of this influence. The south also

    has a wide selection of tropical fruits and vegetables that are not readily available in the cooler north.

    During a morning course, you will have have the opportunity to: learn a selection of favorite dishes;

    recognize the basic ingredients both at the Center; enjoy a trip to the colourful central food market;

    learn about the blending of these many ingredients and spices to create the famous "nuoc mam"

    (fish sauce) and multitude of different rices. Apart from the preparation and cooking under our

    Chef's guidance, you will be introduced to the traditional Vietnamese kitchen with cooking utensils

    still closely linked to the Vietnamese way of life in the past. You will learn a bit of oriental science

    regarding the Yin-Yang balance, some history of Vietnamese cuisine from its roots in the Hue Citadel

    Imperial Cuisine to the effects of various influences from both the West and other Eastern Cultures.

    Finally, you will understand the intricacies of Vietnamese dining etiquette and the technique to master

    eating with chopsticks!

     

    Of course we will adapt the menu to vegetarians or allergic people, please let us know your booking

    in advance so we can accommodate for you.
